Her culinary journey began in the Cape Winelands, where she trained and worked at renowned establishments like Le Bon Vivant and Pierneef à La Motte. Her style is deeply rooted in European technique but draws influence from global flavors – from delicate Japanese dishes to bold South African favourites. With an eye for detail and a love for storytelling through food, Chané crafts immersive dining experiences that delight all the senses.

Chef Fabio Gaspari

With Italian and Portuguese heritage, Chef Fabio infuses every dish with authenticity, warmth, and global flavour. A graduate of the renowned QCTO Culinary Programme (NQF Level 5), he sharpened his skills at some of the Western Cape’s most prestigious kitchens, including Chefs Warehouse at Maison and Leeu Estates. Fabio’s cooking blends Mediterranean soul with modern technique, always guided by quality ingredients and a respect for tradition. Known for his calm, professional service and passion for plating, he helps create unforgettable private dining moments.
